The idea is that when you’re dead you look like you think you look. Night elves look like wisps because they’ve been taught that dead night elf spirits look like that (being able to actually see them on occasion probably helps with that).
So after a while of being an undead with some missing bits, you know what you look like, and when you die your spirit takes the form of an undead with some missing bits, rather than the human you haven’t been for quite some time.
EDIT - also, the Forsaken are in the horde because the alliance (that they used to be in) rejected them; that probably causes even more feeling of not being connected to that human life any more.
i get what your saying but dont most forsaken npcs routeinly mention how its a curse and how negative being undead is, constantly remembering and thinking back on ther previous lives from what ive read while the forsaken wanted tobe in the alliance a lot would still would be human again

Nope, I have no authoritative source, it’s just how I imagine it working.
A lot of the forsaken NPCs that I recall seem to be more in the “fine, I’m gonna be undead forever and kill you all”, but I admit that’s more from the forsaken quest NPCs than any others.

Your appearance now is what we call residual self image. It is the mental projection of your digital self.
Residual self image ( RSI ) is the subjective appearance of a human while connected to the main World.
They do say things similar to that with their voice acting, but many undead have come to accept or even enjoy their undeath.
There was also that large group that wanted to return to Stormwind but… they’re no longer in the picture

I think you are both putting too much thought into it. It’s a game mechanic. Nothing else. Blizz doesn’t want to take the time and money to specifically program a new system to make one race look like another race while dead for no real reason.
It’s probably for gameplay purposes. People who play undead probably don’t want to look like a human under any circumstances.
Your in-game deaths aren’t really canon anyway.
