They can literally choose their forms but most of them are High Elves (especially female Dragons) with a few outliers here and there.
Yet we cannot be High Elves.
Is this a power move by them? Taunting us over our lack of High Elven choice and laughing at us when a Void or Blood Elf think they’re equivalent?

Majority of dragons pick High elf. Heck, Wrathion and his big bro have high elven dragons all around them. Then there’s the aspects that are Elves too with our new race of playable wannabe dragons looking like mutated Elves in visage form.
Deathwing race changed to human and we all saw what happened to him.

Because they have the eyes of those mana addicts and the models of them.
They don’t seem to like being blood elves and I don’t think a single dragon chose void elf.

You’re right, more of them should be like Osoria who clearly chose the best race as her visage.
They picked the races that had the most impact on Azeroth and tried to blend with them.
Having said that not all of them are high elves. Wrathion is clearly a human, Kalec is a half-elf. The Black dragons all picked Outlands races.

Blood/high elves are literally just two political factions of the same race. Void elves are an alliance-aligned faction of blood elves (again, same race) who use void powers/got infused with void. The only thing we don’t have is literally the words ‘high elf’ for our characters (and you could argue elf paladins on Alliance…but frankly given the paladin order hall in Legion night elves should’ve already been given pally as an option).
Don’t most dragons canonically choose a half-elven form just represented in-game with a Belf model.
