Anduin cast a super saiyan holy nova and rezzes all the fallen Alliance soldiers and Genn in the beginning BfA cinematic, why did he not rez Saurfang?

Because the spell he used in the BfA trailer was not a rezz spell. It was a heal.
Also resurrection is a lot harder lore-wise than it is for us player folk.

WoW rez is not real rez. We are not really dead when we die. The spirit healer herself tells us it’s not our time yet. It’s basically a near death experience.
WoW rez is more like taking someone out of death’s door.
But when someone is dead dead, you can’t really bring them back.
Anduin could turn him into a Holy Undead though lol

Resurrection in the lore is rare, incredibly rare.
In one of the novels, Varian dies, and Anduin begs and pleads to the light, and the light answers.
Velen is completely shocked and surprised, and this is when he realized Anduins potential.

Rez was always a non-cannon ability in Warcraft. If someone dies in a cinematic/cutscene then it was permanent, unless shortly after death they are made into undead.

Anduin didn’t rez anyone in the BFA cinematic. He cast the equivalent of Holy Nova or Prayer of Healing and healed everyone back to full from near-death.
In WoW Lore Resurrection is VERY rare.
IIRC, it has only happened a few times - like with Anduin and Varian, or Calia Menethil.
Funny to note that lorewise, Sally Whitemane has a very strong connection to the light. So strong, in fact, that she is able to resurrect people frequently - as seen with Mograine. She’s also able to revive herself from death.

He’s struggling to find his corpse and doesn’t want to have to take the rez sickness. Happens to us all at some point.

Dont worry… Saurfang will become a member of the horsemen squad of Acherus. Lucky for him, Bolvar and the Dk’s know how to bring people back from the eternal rest…
