Zandalari Trolls are just naturally taller. That’s just how it is.
If you want a “scientific” reason. It’s because the Zandalari support only the strongest. Those who are weak end up being criminals, and are thus banished to Vol’dun. Those who are strong end up having strong children, and so on.
Zandalari are/were basically the selective breeders of the Warcraft universe.

Granted, Blizzard hasn’t outright confirmed that is why they are tall, but it makes sense based off of the other things we know about their society.
Because everything is bigger in Zandalar!
I think they are taller because the Zandalari were the original troll tribe and the progenitor race from which the other tribes of troll descended.
Also the Zandalari generally stand tall because of their regal and proud attitude.
