You can only use exotic animals as your symbol if you saw then. Otherwise you get weird stuff like the orc clans being named Blackrock and Dragonmaw, when in Draenor there was no dragons and blackrock mountain was in azeroth. They had to work around with the lore here to make sense of that
I guess we can have to think there was lions in easter kingdoms before, as there is other cats, but they got extinct, or that they saw a Lion before from Kalindor. The continent was not a mystery, people knew about it, obviously there was a few explorations and maybe they even got a few in cages

Lions are a symbol of sloth and exclusion. The males have their females do the pack hunting while they lay around with the young. When males do hunt, they ambush the prey from behind. Very unfitting for an animal praised for being a fierce king. Males are larger, taking more of the catch from the harder working females. Any other male, starving and alone, is forced away to keep the pride pure. Indeed, they are the perfect representation for Stormwind.
I have thought similarly. Male Lions lay about, and have the females do the hard work of hunting and raising the young. They often chase away other predators from their kills - Bullies and scavengers.
They do have awesome hair though. That probably has a lot to do with it.
