I never tanked before, but I like all classes mentioned.
Paladin is really fun
Before i went for my Warrior for tanking, Brewmaster was the one i liked the most out of the ones mentioned

I’d suggest Vengence DH, it’s the most forgiving of the tank specs you listed. As far as addons there are some tanking addons desiged for M+ routing but there aren’t any addons that are going to tell you how to tank. It’s all practice, watching your allies, and prediction.
Why is that?
Also I simply don’t have a max level druid or warrior.
Brewmaster wasnt hard to play and had a lot of utility, plus it had an unique weapon animation with the artifact by resting it on the shoulder
They also have a large amount of aoe attacks, being the Keg, the Fire breathing, the Tornado, etc.
I also think they have the easiest time with dmg mitigation since its basically just keeping the Mitigation buff 100% of the time, unlike the others who usually have to use it at certain times

That entirely depends on playstyle. Here’s shirt descriptions imo
Dk self heal tank that’s slow, grip stuff
Prot Pali mix of mitigation and heal, concentrate a lot, throw your shield, lots of buttons.
Brew monk, always keep iron brew up, spin and roll a lot, breathe fire. Ring of piece stuff
Vengeance, jump around a lot, fun circles to place, mix of mitigation and self heal. Not lots of buttons.
Warrior, thunder clap a whole lot, do massive dmg, weak to magic, screams a lot . Best physical tank
Bear, swipe a lot with some moon beams, good utility, swipe some more
i’m not offended. bears are terrible.
my vote is for pally because you’ll have access to all three roles if you need to switch
Its the same for monks ._.
And in Druids case you have all 4 roles (ranged dps)
Prot Pally or Blood Dk.
Pally is so damned easy though, so why hurt yourself? 
I use Tiny Threat for Details! dmg meters and a marking bar addon.

I always go back to my DH for tanking. It just goes on forever. Love it so much. Most fun tank I have played.

Guardian is fine and can do the same job as other tanks in the vast majority of content.
I think the spec starts failing at M+ around 12 and after Heroic raiding going onto Mythic. I highly doubt OP as a new tank will be in a key pushing M+ group or Mythic raiding guild.
For what? A new tank kicking around dungeons and a few raids, nah not at all my friend!
If you want to be the new hot stuff tankiness then go Blood Dk, watching Limit take down N’Zoth for World 1st and their BDK just absolutely killed it, big numbers, kept up with top heals and top dmg for a long time. Just an example.
