It depends. If you’d prefer better prices and more crafters for things then there’s high population servers, which also have more guild options. If you want better names or bmah deals then opt for some server that nobody has heard of.
Nowadays the only real downside to being on a dead realm as a pvper is probably not being able to find anybody to craft stuff seeing as you can areno/shuffle/rbg from anywhere.

They really need to add a way to buy/catch up the crafting skill points because leveling crafting is pretty easy but being able to make r3 enchants/gems and r5 items is super timegated aside from the first 1-2 items you pour points into after collecting all of the profession items throughout the zones
Then it would just be a matter of having a small collective of alts that could craft anything you would need

Turn in will give you a knowledge point and some mettle.
I got them doing random world quests and opening treasures flying around while I waited in queue for things.
Yes, I have turned in quite a few of these through DF on alts, but as you stated, the only way to obtain them is by random drops, essentially. These should be purchasable imo

Yeah, I know somebody who said he got tipped up to like 30k to craft infurious gear. 
Area52, and Illidan for Horde.
They are the largest servers, more guilds and opportunities to choose from.
Illidan is central time, and Area52 is east coast. Depending on your data center for best ping.
As for Alliance, I dono, never been Alli before… I heard they smell funny, and wear shoes.
