Off the top of my head, I don’t think there are any items that are BOP, so pretty much any class could be suitable. Hopefully someone can correct me if I’m forgetting something. Primarily, in old content, you can make cosmetic glyphs for any class that change the appearance of certain spells, but these can be shared with alts or sold. In Shadowlands, scribes craft stat missives used for legendaries and Darkmoon trinkets, although I’m not sure if these trinkets will be replaced or upgradeable in any way with 9.1. Both of these can be sold. You can also open lockboxes with an item you can craft. You can make a lower SL level staff and an offhand, but I’m not sure if the ven’ari crafter mark upgrade works on these to upgrade to 60, as it’s bugged for several professions. For my scribes, I chose my alliance monk because it suited her class and my horde nightborne mage due to the inscription skill racial bonus. I’m not sure if there are any relevant changes coming to 9.1, so I can’t help there!
If memory serves, there is one recipe for scribes you can only learn as a mage. There might be an exclusive one to shamans too? But the mage one changes the appearance of mage food table. My scribe is a monk, thought it fit well.
Ah, you’re right about the shaman exclusive one! I forgot about that one.
I believe the mage table glyph you can learn on any BUT you have to randomly get the recipe while taking food from a mage table, which makes it easier to obtain on a mage due to the RNG factor. You do have to be in a group to make the table. The technique is not BOP so it can be bought/sold on the AH.
