Nightborne, Highmountain, Maghar and soon Zandalari will have only known one Warchief. That is Sylvanas. So if they see Saurfang, who has gone against the Warchief, isn't it a bit weird for them to back him?
The only Horde my character has known was Sylvanas's. I don't know anything about Thrall or Garrosh (assuming I'm starting after Suramar was liberated, since going back from 20-110 doesn't count since that'd be me going back in time).
And if we keep getting more allied races for the Horde. It's "thanks Sylvanas's Horde" for saving us.
The allied races run into an issue. Because to unlock those allied races they come to the horde via a champion you show them why the horde is better than alliance. The reason this is a problem is now you play that allied race who is actually loyal to that faction because of the champion.
Entirely your decision to make, understanding your race and character. Making an informed choice based on your character's immersion is smart.
That being said, it is entirely logical for your character to meet Sylvanas, be entirely rationally disgusted by her leadership and find the stirrings of a rebellion for another leader, i.e. Saurfang, who has a lot of faction support, and rightfully so. This causes your new character to find out more about Saurfang, interact with him and ultimately back him for warchief.

Case of nightborn big picture I’d see no issue backing Saurfang.
The night Elf zombie bit may hit close to home. They recently overthrew demons who liked them complacent, controlled and basically slaves. If they said hell no to wine and a gilded cage I can see them going yeah....zombie mod time not our thing.
Legit concern imo. They are very related to night elves. I don’t see them saying yeah, it’s cool when we die you may rez us as undead.
And as someone said they could follow their liberator. In my case it be a belf dh who will back Saurfang. I kill demons for pulling the crap sylvanas does. Getting all rp she’d convince Nightborne to do the same.

I feel like nightborne would stand by the blood elves, since they seem to have bonded the most. And I feel like the blood elves will stick with sylvanas, at least most of them.

There's no current indication anyone other than the Forsaken are going to side with sylvanas. There are spoilers out there though for the 8.1 war campaign questing where valtrois and rexxar agree that Sylvanas is bad news, so don't expect the Nightbourne to stand by the banshee queen.
