Ok so, 5 years back people were complaining about WoW’s graphics, saying they were sub par to what is expected of the years visual aesthetics.
When I looked at the game play of Shadowlands, the graphics were astronomically better to that of the WoW i used to know.
When did this leap in graphics occur?

It’s 100% in the artstyle.
Mists of Pandaria is when the game started getting pretty.

MoP was beautiful, Warlords of Draenor made some huge improvements, but Legion was essentially an overhaul of the graphics, at least from my perspective. So I think they made fairly large leaps every 2 years, but Legion REALLY took it up a few notches. Legion was when I saw massive changes; when characters started looking very up to date, when little butterflies and magical sparkles resting over a lake started to look like true fantasy to me. Textures and color schemes and art design are on point now.
I don’t think the art/design team gets enough credit for what they do. They deserve at least a small trophy.

Each expansion was a pretty big step up from its predecesors. I remember to me TBC looked a lot prettier than vanilla, then Wrath stepped it up further with those beautiful snowy mountains and Grizzly Hills. Cata took it a notch further.
And then Pandaria was released and I was blown away! I remember seeing the Pandaren and how expressive they were. It made me feel bad for the vanilla races who looked like a mundle of cubes in comparisson.

Same.
I really loved the human improvements on wod.
They finally decided to upgrade their textures from 254x254 resolution to 512x512 resolution, if they ever decided to actually get with the times and go with 4k resolutions textures WoW would look 1000x better than it does even now.
And no one would be able to play it since it is an mmo and not a single player game.
Battlefield one supports up to 64 players and people can get up to 180 fps on that game, I havent upgraded my PC in 6 years and even I get 40 fps.
WoW has always been pretty demanding. Don’t ask me why but I have an easier time running new games at high settings then wow at a constant 60fps during raids
They have some of the best artists and art directors in the industry. Why would it not look good?
