Engi gnomish and goblin, meaning u have to do it twice.
Eng for sure. Can’t go without your helmets/trinkets. Not to mention the other benefits you got in tbc/wotlk. 100% a necessity.
Engineer. Not the most outright utilitarian but certainly the most fun. First choice on first character and I’m just getting back into it. So many cool things to do, especially in Classic. I love being a crazy goggle-wearing technomancer.
Tailor. Bags are wealth.

On my casters, Tailoring. The high end robes are amazing, and bags are a huge factor!
For hunters, I always felt engineering was beyond important. Crafting the best ammo, jumper cables (great with FD in raid wipes), pvp utility, just fun odds and ends.

You can enchant people’s things via trade menu and its less about others and more of a personal use, if it makes gold that’s fine but my gold will come from bags.

Engineering is required for PvP.
Enchanting because I love disenchanting random drops and quest rewards that I don’t need.
Mining because I die a little bit inside when I see a node in the world and I can’t mine it.
The secondaries for me. Fishing, cooking, and first aid. Pretty much every character gets them ASAP and levels them along the way.
OOOOOH, this reminds me - this is the one profession that had a quest to learn one tier and a book to learn another. I remember frantically bandaging seriously injured soldiers in Theramore and getting past ogres in Stromgarde for the book (refused to pay stupid AH prices for someone else to get it).
LW. Armor kits are hot stuff! And skinning is a wonderful game.
Engineering, just find it fun.
Engi for added threat on aoe pulls/reflectors/Force reactive disk/pvp, and blacksmithing for guild to make dark iron, nightfall, elementium bars, etc.
