For Retail: Damage Range divided by Weapon Speed equals Damage per Second. All ability damage takes either Strength or Attack Power to calculate damage output. I think judgement still uses spell power though.
Weapon types make no difference. (Also you forgot polearm for 2h weapons). It used to, and still does in classic, but the racials that did increase damage based on weapon type were removed on retail.

The weapon type that provides the best matching weapon mog for your armour is the best since looking good = feel good = more dps
It depends on what you are doing.
PVP is all about burst, nobody is going to let you stand there and DPS them, you need to hit as hard as you can each time, so top end damage on a weapon is most important.
For raiding, you want whatever has the highest DPS since you have the time to sit there and pound out your full rotation.
Even that becomes irrelevant though, since in retail you can mog to any equivalent item, even if you like the look of a 2H sword you could just still just equip a 2H axe and then use transmog to give it the sword appearance you like.
End of the day the best weapon is simply going to be the one that provides the best statistical benefit to you at the time.
Unless you’re a dagger user then you’re out of luck
Or using a 2h instead of a 1h for mog reasons
