What’s it like for the person being resurrected to becoming a death knight or foresaken? When they’re on the other side of life (shadow lands, emerald dream, the light).

              The first time the topic of having a choice appeared was by the time of Darkshore scenario and I’m willing to bet that was handfisted because of all the backlash they received about Kaldorei suddenly being raised totally loyal to Sylvanas.

              Nearly every substantial instance of undead being raised has seemed to conform to a different set of rules than previous instances. Blizzard doesn’t really care about establishing a clear logic here, they just do whatever suits the current story.

              As was said above, it is pretty different almost every time. Most early lore indicated that the average Undead had little say in the matter.
The original Forsaken were basically just intelligent zombies and other undead who flocked to Sylvanas since she was the only one really fighting the Lich King, and those who came to after that were seen as sentient enough were given the choice of joining the Forsaken or not. Later on with the Val’kyr this seemed to be the same for PCs at least, but those who were mass-raised were basically conscripts who were never shown to have much choice (whether they could choose or not).
Death Knights have a bit more variety since Second Generation Death Knights like Baron Rivendare were often hand-chosen acolytes of the Scourge or high ranking Humans who willingly offered their souls to the Lich King, both of these processes creating generally stronger Death Knights than those who came after that were forced into it.
As for a sort of afterlife it is really inconsistent. It has always supposedly been the Shadowlands but until recently we had no idea what that was, and during Legion and now BfA we have been shown half a dozen different afterlife realms sooo… who knows.

They don’t get a choice in undergoing the process  for the most part.
Once risen, Forsaken of Lordaeron are typically given the choice of 1. being put back down  2.  serving the Banshee Queen, or  3. Striking out independent with all the risks that entails.
Some choose  4.  Go completely bonkers and/or mindless and need to be put down.

              I imagine it’s mostly a matter of strength when it comes to resurrection. You’re yanking somebody out of the afterlife and depending on who it is, it probably takes a significant amount of effort to override the power that took them to their afterlife in the first place. Hence why we’ve never seen a risen Paladin since Zeliek.
