how can the undead quickly run or walk at all? Their muscles have been dead for decades. Most of them have had their thigh and calf muscles fallen off a long time ago.

So what lore explains how they can still run as fast as the rest of us?

The same lore that explains how they can move and fight despite not having a functional biology.
