There’s probably no way to do that. Honestly don’t know why people even care what the options menu looks like. I rarely ever go in there to begin with.
Because they knew where things were in the old options layout, and now they don’t. Probably.
They added a search bar because of how hard it is to find anything in the new system.
Also, because the new ui takes more steps to do things…
