DPS will have a harder time doing content, but if you get gear it shouldn’t be much of an issue.
Are there any recommended tank and healers for M+? Any to stay away from?
Not as far as I know, though I don’t tank or heal in BfA. I do know that you will have the easiest time finding groups if you’re a tank, followed by a healer. You just need to really know the fights.
Only one class has all four specs. Tank/Heal/Melee DPS/Ranged DPS

You’re posting on a paladin, so I’d say try tanking and healing on that first, to see if you enjoy the roles. If you have issues, decide if it’s a class issue or just the nature of the role you’re performing.
I would also decide how far you’re willing to go in the system. There’s definitely best and worst classes at the higher end, but make sure you want to be there before selecting the class based on it.
Personally, I’d also consider that any new class you make will suffer a huge setback from being a fresh 120 in 8.3. You’ll have to not only grind gear but all the 8.3 currencies and corruptions. So, consider if you want to jump through all those hoops as well.
Resto Druids, are pretty desired in M+ to my knowledge.
That’s just from hear say, I can’t really back that up.
If you chose tank, i recommend learning everything about the encounter as the tank role is often very important. a dps can mess up and it could be fine but if a Tank (or heals) fails a mechanic it can be game over for the group.
DPS is the easiest roll to fill but the hardest to get into a pug as.
Healers tend to be the hardest to find, and a good healer is even harder.
The Best class for a solo pug player imo are the ones that can fill any roll.

How much responsibility do you want in these groups?
Pick something like havoc DH if you want an over all easy time doing decently and getting invited into groups as dps.
That said, you pick a spec like that, you’ll be expected to do mechanics that only fast classes are capable of in raids. Scales for Wrathion, spheres for G’huun, etc.
TBH, if you don’t mind fulfilling what might be asked of you, you’re good playing as w/e you want. Most raids I’m in are nice and diverse. Dungeons too. There’s usually a need for a mix.
