I have about 125K gold, but I don’t know if it’s useful for anything. And stuff in my inventory, is it worth trying to AH mats, or is gold pretty useless these days?
You can buy a WoW Token for $20US and sell it in game for ~140k gold.

Gold is useful for the usual reasons. There are plenty of mounts and pets you can buy, various gear and raid resources, bags, etc.
On the flip side of what Calidge brought up though, and what gold is really useful for, is that you can convert it directly to 30 days of game time by buying a wow token from the auction house, or you can use that same token and convert it to $15 USD worth of balance to your blizzard account, useful for buying things like expansions, in game services, or even other blizz products.
