They exist to balance out the moon worship of the night elves. They get their light powers from the sun.

The Light is also the sun, for them. Something about one of two eyes of the same deity, with the moon (night elves) being the other.

One of the tauren gods is An’she, the sun. Whom they view as one of the eyes of the Earth Mother.
Around Cata Tahu Sagewind (priest) and Aponi Brightmane (paladin) noticed an imbalance in their society. Tauren druids, having been taught by the night elves, followed the moon. The sun side of things was neglected. So in that line of thought they formed the sun priests and sunwalker paladins as new organizations.
Light magic is powered by faith. You don’t have to follow the Light directly like humans and dwarves do. Their reverence of An’she, who they see as the light of the world, is enough to get the same effect and give them Light powers. They’re just a different brand of paladins and priests, but the result is the same.

Something else. The Bloodelves draw light from the Sunwell and they taught the Taurens how to do it because that’s totally in character… not.

Still doesn’t explain why can’t HMT be Sunwalkers. Taurens have their faith in An’she, HMT do as well.

I think its because its a newly rediscovered power for the Taurens.
I find their lore pretty interesting.
I’ve liked Taurens or Minotaur’s since reading the book about Kaz the Minotaur from Dragon Lance.

When Sunwalkers were introduced, Blizzard specifically avoided calling them “Paladins”. They’re Sunwalkers, or colloquially in the Tauren language, “Smash Mouths”, because they might as well be walking on the sun.

Legion class order hall campaign makes it clear that, regardless of the mythology or cultural dressing around their practices, Sunwalkers are engaging with the same force that Human Paladins call the Holy Light.
Different stories, different terminology, same powers, same results.
Sunwalker is code word for well done on steak.
