What if instead of a gladiator slave, Aedelas Blackmoore raised Thrall as his son? How different would Warcraft be?
I doubt that would have changed things all that much.
Thrall is already too human
Aedelas Blackmoore was an abusive, cruel, and simple creature who harbored delusions of grandeur, and intended to use Thrall as a pawn to rule the Orcs and take over Lordaeron.
Even if he treated Thrall like a son, he would still be an abusive, cruel and simple creature harboring those same delusions and plots.

I am assuming when you say raised him as a son instead, you mean he was kind and fatherly to him rather than cruel.
I imagine in that scenario Thrall wouldn’t have grown to be the Orc equivalent of Moses and led his people to Kalimdor.
The Tauren would have been exterminated by the centaurs and the Darkspear eaten by the Murlocs.
The Night Elves would never have come down from their tree house and the Humans would most likely have been wiped out by the scrouge.
No one would have defended Hyjal and Achimonde would have cut down that tree.
On the plus the game would have had an interesting and unique conclusion.
Well, Archimonde eating Nordrassil would sure be a great way to end the franchise
