Legion 5,6 and 7 demo was really fun for me. Aside from that, Cata (season 10) ferals and MoP (season 13) Shadow priest were absolutely amazing in terms of enjoyability and complexity. A few others that I enjoyed playing were balance druid (season 14-15), sub rogue (all throughout Cata), and late Wrath frost mage.
If you did your talent points right, you could run a completely viable death knight in Blood DPS spec. It played that as my main, and i remember when they changed talents right before Cata, feeling like I was starting Cata without a main, and basically started over with the new Goblin race. A shame too, I felt like in Cata that the delay in leveling a new toon and learning a new class (warlock) I was always behind, and never did catch up with the progression of the community.
Cata pvp set bonuses allowed priests to actually kite bad warriors and dks. Imagine a priest kiting anything today.

I played classic and then came back missing all sorts of stuff in legion s7. I had an absolute blast playing ele,
no flame shock CD, gust of wind, Icefury hitting hard, I really enjoyed it
I haven’t played many xpacs of pvp I was a clicker till wod but I enjoyed 7.3.5 WW and also healing on MW was occasionally entertaining
MoP S14/S15 enhance… just going around Zapping people from ~60% health.
I wish I had the memory of some of you with what not only certain expansions had but the various seasons within them lol. Insane.
But, MoP feral was my most fun. I sold 2’s carries, dps didn’t have insane self healing across the board and bleeds were super strong.
I played enhance as much as mage in mop and wod. Hands down the most fun spec of all time in those expacs.
Wrath ele, all season were fun.
Even DK/ret memes and icc op items.
WoD for DK, even though siphon healing was super op overall for DKs there was still alot of room for growth w/ darksim, blood tap etc. If 2 equally geared FDKs dueled and one had poor blood tap management he would get steamrolled. And dark sim wasn’t overshadowed by other honor talents.
Currently enjoying BFA hunter PvE alot because it’s so fluid but I also didn’t PvE before this xpac. Also enjoying BFA the most for world PvP/duels on my hunter because I discovered alot of cheese tricks for those venues of PvP lol (although the tricks come from alot of xpacs as early as WoD)
Literally every single spec having an interrupt was horrible game design. This was also a time when every single class had a significant self heal, a stun etc. Extreme class homogenization. Which in turn led to the huge pruning in legion. I’m all for unpruning because it took away a ton of flavour from classes, but I certainly wouldn’t endorse going to the other extreme of giving every healer an interrupt (for example) and ending up in a place of extreme class/spec homogenization.
Legion Elemental Shaman. Throw out flame shock on everything that moves and turret insta lava bursts.
Mage in almost all of MoP. It was so good and I loved Blink + Blazing Speed so much, on top of all 3 specs feeling really good to play.

All cata of Ret paladin was amazing, epitome of class design while clunky it was so god damn strong.
