Based on their skin color, I’d say a blackish-red? But I’m not sure if there is any correct answer. They could also have straight up lava in their veins for all I know. Any help?
Well I would assume the same as other dwarves, the usual color of deep crimson. Otherwise? Probably lava or lava-like, if Ragnoros really did dig his influence that deep into the dark iron’s biology which seems somewhat likely with the comment the Pristy Quickcharge makes about it.
One way to find out…
This is a common misconception. Our cousins from Blackrock don’t actually have blood. They have lava flowing in their veins. This way, when they die, they melt the weapons of their slayers, and if lucky, sometimes the one who slew them as well.

While I can understand where you’re coming from on that, as NElves originally bled purple and they ARE purple and draenei bleed blue? Red. Just like other dwarves. They’re not another race. They’re still just dwarves.
Almost every other race bleeds red. Even orcs, despite it nearly being black with how dark of a red it is.
So Dark Iron are just Fireforged Dwarves right?
Previously, I would have fully agreed. But since they’ve been introduced as an AR, they’ve been given fire eyes and burning beards/hair. Since that’s not what hair normally does, it does seem like Ragnaros has managed to somehow affect them on a biological level.
For now, I’d say they probably bleed red like any other Dwarf, but I wouldn’t be surprised if we cut one open and find molten orange blood (just like I wouldn’t be surprised if Frostborn blood is icy blue).
Orcs used to only be brown or green by lore, until Blizzard made the grey skin canon. Then expanded to make Blackrock orcs actually black orcs with rocks burned into their skin. Blizzard likes to update models on occasion to make them pop. That’s why the Dragonmaw have “glowing” yellow eyes and the Blackrock shade of skin. Other than updated appearances, we haven’t really heard anything to suggest anything else has changed.
My personal headcanon is that they actually have lava in their veins and I will accept nothing less from my short angry fire friends.

Well, blood is made of iron, so I guess they’d have dark iron blood.

There are a lot of instances in the comics and such and official artwork that show Dark irons being killed, and bleeding normal blood
