I feel like I haven’t seen that many Goblin Monks aside from mine, or Worgen Monks for that matter, maybe because they’re newer? I also don’t think I’ve seen many Worgen Priests either now that I think of it, or even Orc Priests.
When I think of allied races, I think I’ve seen more Kul Tirans than I have Mechagnome anything, but they’ve still been a little rare, the Enh Shaman I run keys with is a Kul Tiran though so they do exist!
I’ve seen a few Mechagnome casters but they’re very few. I’ve seen a good handful of the Horde allied races around though so I cant say anything specific there.
Honestly, Undead Monks I haven’t seen much of either aside from one in BFA that I raided with briefly.
Hard to say which has been the rarest of all to me, but if I had to at least have one? Kul Tiran Rogue, I really don’t think I’ve ever seen one out in the world. Maybe they’re just all in stealth.

Pretty much my alt list.
Tauren and HMT priests, mage, warlock, rogue, monk and dk. Tauren paladin too since they compete with butt elf paladins.
The rest have been around a long time.
I have seen plenty of special combinations, but I haven’t seen much of Mag’har Orcs.
I’ve got a Tau/Pal! Way cooler than a blood elf. Especially now since they’ve gotten so many amazing transmogs. You can rep tauren hard these days. BE pallies did get that cool extra armor set, but the colours just aren’t quite right. Plus they got such lackluster customisation options in SL.

For the Horde it’s pretty much anything troll, goblin and HMT is rare. Some tauren and orc (both kinds) are rare too, like priests and mages.
For the Alliance it’s some dwarves, gnomes and KT. Mechagnomes are practically unicorns.
Pandas for both, minus monks.
I mained an Undead Monk from MoP to BfA 
Raid member dies > serpent kick > cannibalize.
The good times… I’m boring now with my goats and velves.
RP servers are different in that I see a lot more diversity in class/race combos than traditional servers.

I want to say I’ve seen a few Pandaren Shamans as well, but now I’m second guessing. They’re very few compared to Monks which is still fairly uncommon.
I have a tauren and HMT lock to 70 but they’re just alts.
But I agree with you that they’re probably the rarest or tied with Mechagnomes.
I think the thicc bois are usually played just because of the lols. But most people don’t like the mechagnome abominations.
