We do have two or three bat mounts, so far the Ur’zul and rooster are the only ones that haven’t been reskinned and released in new colors.

INvincible. Custom everything, it just has a horse frame.
Everything else about Invincible makes him potentially the most rare and most unique mount in the game. As far as I know, there is absolutely nothing else that even looks close to Invincible.

I plan on getting one whenever WCIII goes on sale.

Ur’zhul is unique but it uses gryphon rigging, by looking at it lol.
Most mounts are reskins or reused skeletons in some way.
I think those Shadowlands “giant hand” mounts are pretty unique though, they all only come from there, aside from that one on the trading post.

Theres a bat mount off a rare in BFA Arathi Highlands. Theres a pile from SL Revendreth faction but they’re a different bat model.

Spellbook mount.
Awesome model, awesome animations, awesome size, perfect for arcane mage, rare and only attainable from a difficult achievement = one of the best mounts in the game.

They are super pretty. They really are the only mounts I truly have the worst FOMO about because I never got them when they were current. 
I usually think the most unique mount models are inanimate objects, like the flying disks, flying books, the pirate ship…
But as for ‘living’ creatures, I’d say the Elemental mounts (eg. Shaman class mounts, Jaina’s water elementsl, etc) and the Treant mount.
One type of mount that we don’t have and it would be amazing was simply… flying with magic, Maybe some arcane effects around your character,
The antorus hero one, but that’s trading post soon.
I actually like the epic Engineering mount from back in tBC. I wish they would do a remaster of it.

Yeah, now it comes in flessssssssh color.
The most unique mounts in the game would probably end up being…
Taivan: Big boy, only mount using that model.
Eve’s riding broom thing: Currently it’s the only one in the game but there’s going to be more.
Mythic Fyrakk mount: It may be a walking bird mount, but it’s the only owl which is normally only available to druid flight forms.
Bloodfang Widow: Only other mount using the same look is the Vicious War Spider. The trio of rep mounts from the Severed Threads are similar but are actually different with different animations and mount specials.
Longboys: Only two of their kind.
Everything else has 3+ variations of reskin (Ur’zul being a reskinned gryphon, Antoras Hounds being reskinned dozens of times with other legion, venthyr, and forsaken mounts, the various flying head mounts, even the hivemind sharing similarities to the other flying jellyfish mounts etc).
Honorable mentions for currently unobtainable or shop mounts like:
The Dreadwake - It’s a flying boat
The Wandering Ancient - It’s a giant tree
The Orgrimmar Interceptor - It’s a zeppelin with weird physics

Yeah, it’s kinda funny how since I posted this thread, some mounts have actually gone down in uniqueness. At least when they only shared skeletons, it could be difficult to tell two mounts had the same skeleton, but we are now have so many recolours it’s kinda crazy.
