Can i start with engineering and still make money? Whar can i pair it with mining? If not that what do i do?
Engineering doesnt make money. The few methods that are possible (trying to sell bullets to Hunters) are rarely worth the time.
That said, Mining/Engineering will generate gold and allow you to skill up Engineering while you level. Alternatively, go Mining/Skinning until Level 40. Drop Skinning for Engineering when you have your mount.
Here is the conventional wisdom: Go skinning/mining at the start. Vendor all skins. After you have a good chunk of money, swap to engineering and use the stuff you mined to level it. Another option is to go tailor/enchanting off the bat, make your wand, make some basic green gear, then drop both and go skinning/mining.

I’m going Skinning and Leatherworking. My wife is maining a Hunter and I will be a Shaman, so there will be a lot of use for that leather to keep us in appropriate armor.
Not worried about how it can generate money. that’s what quests and loot is for!
I will most likely be a very financiall destitute Tauren, hahaha.

If you have never played Vanilla or even the Classic beta/stress tests you will be very surprised by how little gold you make from quests and most loot. Keep in mind as you level you have to buy every spell and power you don’t get them for free. Also your wife will be spending a small fortune to buy ammo for her weapon.
I would advise to go skinning/mining until at least 40, then switch to engineering if you’d like.

We zipped about on the stress test, and started playing pre- cata. We have no plans to be Azeroth’s Richest. She is planning on going mining/herbalism for her own skills to generate a means to purchase her ammo/pet food.
I mained a Hunter in Vanillas and I never had to buy all that much pet food but then I pretty much stayed with using carnivore’s as pets and that you get in abundance leveling 
You can’t track herbs and ore at the same time in Classic.
Pick one and go skinning for other profession.

Nobody is going to have money at the beginning.
Also, everyone will be spending money on training, and especially saving for their riding skill/mount.
