Since Humans are different from us irl, would the primates in WoW (i.e. Gorillas and Monkeys) be related to them like they’re related to us irl?
Also how can Humans crossbred with other species if they’re not in the same genus? The reason why Hybrids exist is because there is some compatibility in the genetics to produce offspring, though not always viable. Like how a Lion and a Tiger can create a Liger, because they’re close enough genetically that they can produce offspring.
How can there be Half-Elves if Elves are evolved Trolls and Humans are devolved Vrykul with no shared ancestry?
No, the WoW evolution lore for humans says they evolved from Vrykul, who were originally Titan created beings that the Old Gods cursed with the Curse of Flesh. Humans were essentially genetic mutations of Vrykul that were smaller that they shipped off to Eastern Kingdoms to chill with other mutated Vrykul instead of being killed.
Humans (collectively referred to as mankind or humanity) are a resilient species native to the world of Azeroth. Recent discoveries have shown that humans are descended from the barbaric half-giant vrykul of Northrend. Born “weak” and “deformed” as a result of the Curse of Flesh, they had to be exterminated to keep the vrykul race pure, but not all vrykul could bear to kill their children, and they took them away to a land far away from Northrend, in the northern Eastern Kingdoms.
Since Titans and Eternals seem to have a general humanoid body shape it’s safe to assume that most intelligent life looking similar is by design and/or just how the universe works because magic.
No, quite literally, magic. Most of the races are interconnected by either having origins directly or indirectly tied to the Titans, or the power of the titans: magic.
Macro Evolution and magic share a common trait: made up beliefs that have nothing to do with reality, so don’t put realistic constructs and expectations on them.

Because thanks to the Curse of Flesh and/or energy from exploding or non-exploding Moon Wells and whatever else magic or curses have happened, every creature on Azeroth have become genetic mutations. And when these mutations get together they are always compatible enough to produce offspring. (Only exception would be Forsaken even though thanks to Marcus the Paladin we know they do enjoy dating.)
Now IRL, usually hybrids of distant species are sterile. Like a liger which is a hybrid of a lion and a tiger. But again, everyone in Azeroth is a genetic mutation so any offspring are also able to produce thanks to being genetic mutations.
Humans, dwarves, and gnomes are descended from robots created by the Titans. Their ancestors were afflicted with the curse of flesh. They did not evolve in the Earth sense of the term.
As for interbreeding, this is most likely due to the magics released from both the Well of Eternity and Curse of Flesh. And because it is a fantasy game… interbreeding species is a big thing in fantasy games because of earth’s humans.
