I distinctly remember there being something about 2 eye options datamined for death knights that were supposedly coming… We all speculated it was finally green and a red options so all the specs would have 1 glowing eye option associated with them… What ever happened to that? Was it just a fever dream?

I doubt they would add more eye options. Heck they even took away our dk specific voice.

What is really funny about dk lore. Eye color is attached to the magic that was used during their creation.
We have blue… because lk power is blue. So they could theoretically have any colored eyes.
Tbh I’d be happy if I could sound like my old self again. Feels bad being a dk main and losing the iconic dk voice a few years back.
Even if they do add more options, they will probably be bugged and remove a DK’s eyes completely for maximum nightmare fuel.

DHs should totally have that option! What happens if their fel orbs they replaced their eyes with fall out? 
I am pretty sure they are already blind. The fel fire literally burned out their eyes and their head is just permanently ghostrider mode lol.
Nah, they aren’t totally blind. They see in shades of grey and different types of magic are what they see in colors with their new fel orbs. 
I would do it slightly different.
Because DKs draw power from the Shadowlands, I would use Shadowlands as inspiration:
Throw in some lightforged gold and you have yourself a deal.
Mawsworn Black is Domination magic, though.
Jokes aside, since DKs are now summoning the Four Horsemen who ride Mawsworn Black Horses, I reckon they still got some… let’s say ethical uses of Domination Magic going on.
