Which professions (in your opinion) best fit a warlock from a thematic perspective?
Alchemy or Enchanting would probably be the most thematic, though you could add Tailoring as Warlocks are, by nature, self-sufficient.
And maybe inscription? Of course, the burning legion had a fair share of engineers, but I don’t really know if that’s really warlocky
My warlock is an enhancement specialist. My warlock is Jewelcrafter/Enchanter.
I was tailor / enchanter from Vanila, switched to tailor / engineer in WOD never looked back. Engineering gives so many useful toys that work across expansions.
as a raider, alchemy for 2hrs flask is a must to me.
engineering for a better life quality.

IMO, Enchanting, Tailoring, Alchemy, Herbalism is the most fitting. Warlocks tend to be witches (And by gender ruling and whatnot) which tend to do all of these. In rare cases, even Skinning and Tailoring can be the go-to as well in game as well as theme, at least whenever I play my Warlock, I always imagine skinning some poor guy that isn’t an animal to make some “Enchanted, cursed clothes”
I also would say Inscription but I never found any fun RP moments to find a “Theme” for Warlocks but I’m sure someone has done a “I’ve been tatting a bunch of Demon Hunters” sort of deal but that sounds pretty generally typical.
My warlock unravels spider webs to make wicked dresses that boosts her awesome fel powers! She also destroys worthless subpar items to fuel powerful enchantments… And some illusions occasionally.
Enchanting because of the magic element in it.
Alchemy especially as an undead. They like to do lots of experiments.
Inscription because a lot of warlock spells animations have scripture
Tailoring because you don’t trust anyone to make your fel robes
Jewelcrafting because putting power in stones is our specialty.
