I haven’t been able to find the info.

Is it linear (like Shadowlands) or choose-your-own-adventure (as with Legion and BFA)?

Linear.

Isle of Dorn > Ringing Deeps > Hallowfall > Ahj’Kahet

They aren’t doing the choose your own adventure route again. It’s harder to write a cohesive story that way.
