That pretty much indicates that the art team presented them to the lore team, not the other way around.
Being honest and saying it’s for representations sake and doesn’t have to make sense is totally fine and even commendable. Abusing people for saying it’s an obvious retcon and could use some lore is not.
The humans have only been in Tanaris for a few decades, maybe less. Wildhammer have been tan? Tanaris Wastewanderers are, TAN. Gnomes make a little sense because they have a small sand gnome population, but…

Tanaris was one example of many. Humans are present all over the EK, north to south.
Humans are also, you know, a real thing, not a fantasy race, and some of us humans are actually black and brown irl.
I don’t think Blizzard particularly cares about probable evolutionary science. Melanin? Where has melanin been a subject in Warcraft? Everything in Warcraft is rooted in magic, even life.
Not a single playable species in WoW is a result of pure evolution. Either they were created, experimented on, or cursed.
