Would waiting a day or two make difference in avoiding the launch pack? I’m a slow gamer that like to take my time and look at the scenery and do all the side quests.

Yeah, probably. Or just log in around 4 am. 
But the expansion-day rush is pretty fun too. You can always go through it on an alt later.
I’m going to be holding off a day or so. My friend doesn’t have the xpak yet and we wanted to quest together. Plus everyone is going to be in the same zones, on the same quests, fighting the same mobs. My comp goes into meltdown with just the icecrowns rares, I can only imagine trying to quest right after launch.

Objectively yes, but really given the timing of the holiday, I’d expect the leveling to be pretty packed even through the weekend as their holiday winds down.
There are going to be 4 leveling zones, so no, not everyone will be in the same zone. It’ll be just like BFA and Legion where people have been split up among the different zones, each picking whichever they feel like doing first.
Also, there’s plenty of sharding and phasing that’ll be implemented to prevent 100s of players hunting the same 10 mobs.

waiting a few days will make a difference because a huge amount of people will be in the first few groups to hit 60. Then stragglers and alts will come out, so waiting 2 or 3 daysw ill make a difference.

There is literally 1 linear path and world scaling is gone for your first toon.

Pretty sure it doesn’t work like that. Everyone will be doing the same things the first time leveling. It’s not until you go back on alts that you have more options.

Don’t forget you have to complete the main questline to open up end game content.
You could reach level 60 doing dungeons or PVP, but you will STILL have to go complete the questline in a specific order to open up the end game content.
I’m sure it’s gonna be crazy. Some like that kind of thing, and done it in the past, but I’m gonna begin later this time. I don’t feel like spending an hour trying to kill six wolves because they are killed so fast the minute the spawn.

It’s really the Maw that is going to get people. Bastion too but to a lesser extent.
Maldraxus opens up to 3 main questlines you can do in any order you want so people will naturally spread out more at that point. After that point, there will be enough deviation of folks leveling that areas will simmer down.
The Maw 100% sucks and will be the first huge road block…Bastion will be real annoying too. After that, things should improve largely.
One good thing about all rhe obsessive players, yeah they will sit at their computers 10 minutes to launch as if waiting to order a ps5…and when they log in they’ll pull all nighters…
BUT that means a large number of players will way out pace folks that can’t (or don’t want to) be on tomorrow night. That should clear out the starting stuff a tad at least.
Not true at all. The first time through is 100% linear. Bastion, then Maldraxxus, then Ardenweald, and finally Revendreth.

There are also going to be a ton of people in the leveling zones for the first month at least. I doubt it’s going to be much better if you wait a couple of days.
I will be waiting AT LEAST a week or so to be honest, I’m too fearful of joining a covenant and seeing it being nerfed next week, also launch are always full of lags, DCs and bugs, its better to just wait, but that is merely my opinion, I’ll be playing 7 days to die or something else meanwhile.

You can’t join a Covenant until you’ve hit max level and done the entire storyline through each zone.
