For some reason when mounting up, I have to sometimes click it twice to get it to mount up. I tend to find this bug more often when logging back into the character. It will sometimes act like it’s mounting up but it doesn’t. But the second press will work and then I won’t experience the issue again for a little while.

Hey, I think I’m experiencing this - but as the mount is favourited, it’s happening to me when I hit the “summon random favourite mount” button. Always fails, like you said - the “summoning” cast bar appears, but there’s no summoning animation and my character stands stock still, and when the cast completes nothing happens.
