Update: My UI finally saved!!
It took saving after each and every moment of anything but its saved!!

After Spending an hour or so setting up the UI… I SAVED IT!!! Four (4) Times… I logged out to send some Gold over, logged right back in… span of 2 mins max… aaaaaaaaaaaaaaannd it’s Gone.
I … Saved… It… Four… Times…

I’m having the same issue :\ I’ve tried repeatedly over the past 2 days to set up my UI and it just won’t save. Restarted everything, have all add-ons disabled, tried every possible variation of button clicking and on different toons and it just doesn’t work. Very frustrating 
If you don’t make a profile it saves to default instead.
Try setting it to default and see if that works
I created a new profile before setting up… when i logged in the UI was back to basic and the profile i created for it was gone.
