Does anyone know if eye color option #7 is the “blind eye” option? They actually look like real eyeballs, except they’re grey…Not going for a blind aesthetic for this character, so I’m trying to figure it.
It’s whatever you want. My character has ‘‘blind’’ eyes cause I think they look cool. If you want to be very blind there’s a 8th option for Undead that removes the eyes completely.

I get what you’re saying, but Blizzard has put many blind options in and I was trying to figure out whether or not #7 was Undeads blind option or if they even had one at all. If #7 was just a realistic eye look then I will probably pick it, like I said I’m not trying for a blind look for the character I’m making.
I don’t think there is anywhere specified whether the eyes are functional or not. So it really is up to you.
I think Forsaken have the most leeway in this regard. Even a Forsaken with empty sockets could “see” through shadow magic or some unspecified paranormal means.

Could be blind or could be just because they are dead. It’s up to you.
Does eye Colour change after death?

Hmmm…yeah ok. I like how you can see the pupils, but I didn’t think having a blind Forsaken hunter makes a whole heap of sense. So could be functional for the purpose of the character.
I use the “blind eyes” option on one of my Mages. Gives him an “otherworldly power” look instead of making him look blind. So, as long as you think it looks cool, use whatever you like 
Is the eye option not available in the barbershop? My warlock has just eyesockets, but when I went to adjust my deathknight undead, there’s no option for eyes. And I honestly haven’t poked around the barbershop in such a long time that I don’t know if that was ever an option.
EDIT: Okay, I just checked on my warlock at the barbershop in Oribos and the eye change is there. But it wasn’t available at the one in Orgrimmar.
BUT then I took my warlock to Org and eyes can be changed.
So I guess it’s just a death knight thing. No eyeball changes for death knights. OH WELL
