I mean, technically nobody in this game actually dies unless it’s an NPC that gets completely obliterated.
They can die, try swinging with more momentum.

Undead simply means something/someone that was dead that has been re-animated via magic. There is nothing about that process that makes them unable to be killed again. Reanimated flesh and bones can still be smashed and cut and burned and otherwise destroyed. Or the magic that is animating them can be broken or countered by other magic.
