Attempt #2 to get this bug seen
No matter what food or how much food I eat stats will not swap to the proper stat I want (it randomly swapped to multi stats when I was eating the food that it was already set to, mastery) this has started happening since the patch it fixed itself once earlier in the week but its been 10 days this time and im losing so much gold buying hundreds of food buffs to try and get its only job of watching me eat
Seeing as pve trinkets will be better in pve in next patch I hope this bug gets seen soon to be fixed

just going to leave this here, to rule out any misunderstanding of how this is meant to work…
There are four versions of this trinket, determined by which bonus IDs are present on it.
- one gives a crit buff,
Unbound Changeling, with bonus ID 6916 - one gives a haste buff,
Unbound Changeling, with bonus ID 6917 - one gives a mastery buff,
Unbound Changeling, with bonus ID 6918 - one gives a crit, haste, and mastery buff;
Unbound Changeling, with bonus ID 6915
The crit, haste, and mastery buff has around 41.8% of each stat relative to the buffs that only buff a single primary stat, which can make it stronger if all three stats are strong for your specialization.
This trinket can change its bonus ID whenever you gain any Well Fed buff. If you eat 
Spinefin Souffle and Fries, 
Tenebrous Crown Roast Aspic, or 
Iridescent Ravioli with Apple Sauce it will usually become the crit, haste, or mastery version, respectively. However, there is a low chance the first time you gain a Well Fed buff each day that it will instead become the Unbound Changeling version. You can track the status of whether the trinket is still able to transform into the three stat version each day with the following script. If the quest is complete, then you cannot attempt to transform it until the next daily reset.

i am stuck in the same boat as you…mine is stuck on crit no matter what I do
changing gear to support the stat i want/food i eat

I’ve taken a look and we haven’t been receiving reports regarding this.
Taking this in consideration, we don’t have any workarounds at the moment nor can we provide any compensation regarding this since it is not a verified issue yet.
And yet i have found reports such as yours…hmmmm looks like the support agent really delved into the issue!
Ok I hope this works for you as it did for me. Put the trinket in your bags for like 5 minutes. I did this and slapped on my pvp trinkets for a few minutes> Once i put the changeling back on and ate my haste food it finally reverted to the haste version of the trinket…hope this works for u
