As title says, I turn on battle stance with prot spec, and when I log out and log in, automatically the Defensive Stance turns on.
Logged completely out of the game and launcher, right click on the launcher and select to run as administrator. That should allow the changes to save between that and future logins.

I believe that’s by design.
I like it better than the days where I’d swap specs and tank half a dungeon (or DPS half a raid) before realising I was unstanced.

Yeah, if you swap spec, defensive instance turns on automatically, and it’s ok. But, I turn on battle stance, and after log out and log in, it turns back to defensive stance.
I’m having the exact same issue. It used to save my current stance from what I logged out as, now I have to remember to change back to Battle each time. It’s a small thing, but definitely annoying. I like to use Battle for questing, heroics, and solo play. Then use Defensive for M+ and raiding. I have a feeling this is tied to our talent trees, like they probably have something that checks your spec each login, and switches to the standard stance for that spec.
