On my gatherer toon I have to select tracking either herbs or ore. Someone suggested Gathermate2, but that shows spots where I’ve gathered before, not where the herbs and ore are near me right now. Is there a way to activate both, or an add on that will just show me both on the minimap?

No, its possible since you would be out of combat that you could create a weak aura that would flip between the two, though I suspect you would end up missing even more then. That would also be verging on automation so would probably at best be a very grey area, if not potentially a violation of the TOS.
Personally I never put both on the same character. My suggestion, if you want to do both simply work into your circuit checking on the key areas where you know mines are, and track herbs since they are much harder to see, where mines are usually easy to spot.
Build a toggle macro you can swap back and forth quickly; saves time or you can DL an addon that does this.
If you are using both Herbalism and Mining, Gathermate2 is essential for this. All spawns have a set x,y spawnpoint. Install the Gathermate2 data and import it, and it will upload all spawns for your gathering professions, and this will give you a visual of when its best to toggle between Herbalism or Mining.
As said above, make a toggle macro. Either TBC or Wrath lets you track both at the same time. Til then, this is the workaround.
