what’s sort of thematic and class fanasty for a shaman to have for a profession?
Herblore and Alch? (medicines, what a irl shaman actually does)
Or something like skinning or tailoring with enchanting?

I’m not sure there is any particular class fantasy fit for Shamans. The only class fantasy thing I can think of is Engineering being the exact opposite of a Shaman.
I think you can’t go wrong with either Leatherworking/Skinning or Alchemy/Herbalism. They’re just very solid professions for a mail armor class.
You could go double crafting, but that will mean you need either a gathering alt, or a lot of gold.

Do we know of any go to mail items leather workers are crafting this expansion for crafted gear?
You will be able to craft very high quality mail armor in most slots, up to Mythic raid quality. I’m not sure what the exact limit on crafting them is, but I do know that the requirements to craft gear that powerful will be steep. You need to specialize in the right things, you need a lot of skill, there are enhancement items you will need that drop in raids or high M+, etc.
