I have that question. Because in Warcraft 3 they explain the liches are followers orcs of Ner´zhul who were tortured by the demonds when Kil´jaeden capture ner´zhul and his followers, and kil´jaeden transformed them in those aberrations calls liches. But in wotlk don´t mention about orcs lich, the liches you see were all humans in the past.

I’ve heard rumors of Ner’Zhul’s followers and perhaps the remaining first generation Death Knights were transformed into Liches by the Burning Legion.
A lich’s prior life is immaterial. Their transformation into lich strips them of racial characteristics and their souls are bound to specialized vessels referred to as phylacteries.
as far as I’m aware all the liches we’ve encountered in wow were human.
(barring ner’zhul of course)
but I don’t think there’s any reason why any race couldn’t become a lich

He’s apparently a very lively corpse, though. He’s actually kind of a powerful figure in lore if you care to read more about him.

Wouldn’t be the first time. Consider the VanCleefs. Total low level dungeon. Look at Gunther Arcanus, reduced to questless NPC status.
the defias brotherhood as a whole was just sorta weirdly spread out over the levels.
you kill their leader at level 15, but then you keep dealing with them in later levels during vanilla.

After binding the Sunwell, Dar’Khan could not help but taste and gorge upon its energies directly, against Arthas’ orders. When Arthas hurled Kel’Thuzad’s remains into the well, its energies became dark and tainted, raising the former necromancer as a lich. However, Dar’Khan was also affected by this ritual, having directly consumed some of the Sunwell shortly beforehand – Arthas informed him that the well was now contaminated, and having tasted it after its binding, so too was Dar’Khan, who could feel an alteration in the very “depths of his being.” It may be that Dar’Khan was also imbued with similar lich-like properties to Kel’Thuzad after “surviving” this experience."
