i use to make fudge from scratch with hershey’s cocoa powder. they had a recipe on the side of the can for it. problem was, i didnt have a candy thermometer, and making that stuff is like a chemistry lesson. the sugar has to reach a certain point where it just begins to change from a soft mushy stage where its sorta like melted plastic, to a crunchy crystallized stage. cook too long or too hot, it turns brittle and crumbles when you try to cut it. not long enough or too cold, it ends up resembling fudge topping. i never quite got it right but my kids loved it

I remember making fudge using that recipe, without a candy thermometer. You had to get it to soft ball stage. I checked using a glass if cold water from the fridge. If you dropped a drop of fudge into the water, and it formed a soft ball at the bottom of the glass it was ready.

THIS IS THE BIGGEST OBSTACLE FOR ME MAKING TANGHULU !!! Idk if you’re familiar but basically candied fruit, so I’d wanna make strawberries and the candy thermometer is important for making sure your sugar corn syrup mix is perfect so it doesn’t get all weird when you eat it.
But I am glad your kids loved it!! thats what counts!! Trial and error is probably the best form of trying recipes anyways!!!

yeah i know all about the softball stage. lol. oh the messes i would make dropping that stuff into cups of cold water. and i could never tell. i think i was cooking it with a pan made of cheap metal, which kinda messes up the temp. you need a high quality metal pan or at the very least one that isn’t super thin metal

Nope it’s the default look just an alternate color. I’ve got the mage tower one though, but the current transmog isn’t using that one.
