How do Demon Hunters fit into the story now? Are they accepted into cities and towns? Are they still shunned? What will their purpose be now that the legion has been stopped (temporarily?)
TL;DR? We have no idea.
It is unlikely such people are really accepted, but they are tolerated. I imagine it is rather much like with Death Knights. Demon Hunters likely do not go down to the Blue Recluse for a nice pint at the end of the day.
As a group the illidari likely still live for their work and spend their time often rifling out demons, though they perhaps went after void entities during the latter parts of BFA.
Following the conclusion of Legion, Demon Hunters have pretty much been altogether ignored. None appear in BFA whatsoever, and they’re not even mentioned.
So… it’s anyone’s guess.
They go where the people are, so that they can keep griping about “what they have given”. Otherwise they’re just standing around trying to one up each other.
It’s unlikely the status quo has changed much.
Most races still shun them as they are basically fel-fueled half-demons with an indeterminate number of demons inside of them; who may or may not be influencing their actions.
Seeing a demon hunter walk the streets of Stormwind or a night elven city is unlikely. On the other hand, the blood elves may be more welcoming of their cursed kin, what with their more liberal approach to magic in general.
And while the illidari are still the best to call when you have magical beasties or demons to slay. It would not surprise me if the illidari serve much like a mercenary organization, taking contracts to help azerothians deal with demonic issues or other supernatural threats.
On the other hand, I highly doubt anyone in their sane mind would invite demon hunters to the events of Shadowlands if they could avoid it.
Letting a half demon; let alone the demons inside of them; into realms made of literal souls is begging for a disaster. It would be like walking a bipolar dog with ADHD into a sausage shop and expecting nothing to possibly go wrong.
I believe I read in one of the old RPG books that as part of their initiation, all demon Hunters swore that they would commit ritual suicide once the Legion was defeated, as the Demon Hunters themselves would be the last remaining source of demonic corruption. That obviously has not happened, and that is why the RPG books are not considered canon.
It is likely that Demon Hunters will be in the same boat as Death Knights post-WOTLK, where they will just sorta be around but won’t have any real relevance to the plot. However, just because the Burning Legion is defeated doesn’t mean that there are not anymore demons, so Demon Hunters could theoretically still be traveling around Azeroth to exterminate these beings.
Tehd and Marius do show up in Zuldazar as part of one of the rare encounters, so those two are at least still around:
I like to imagine Demon Hunters have basically become Azeroth’s version of a Witcher… General population’s hatred and fear of them and all.
I still wish we got some tidbits that there are just solo or groups of Demon Hunters roaming the desolate cosmos eliminating stray clusters of demons.
The same fate as death knights post-wrath.

Entertaining in short bursts, but their desperate need to confirm their biases causing them to engage in increasingly exasperating behavior until everyone realizes their history channel show is just the same show-and-tell of their lastest futile demon hunting toy and relentless blue-balling.
As mentioned, Tehd and Marius are in Zuldazar. Which is interesting. The Queen of the Forsaken ordered the capital of the Night Elves burned, but these two are still working together and staying out of the Faction conflict. It is a neat tidbit.
Well, at least the DKs had a mild integration into the Factions after Wrath. In Andorhal, we see DKs being put in command of both Factions forces.
I do not recall the DHs being similarly showcased as part of the Faction War in BfA.
DKs are probably getting alot of focus and story again in Shadowlands, and were opened up to new races. Perhaps DHs will get an expansion that expands their ranks as well.

The Illidari as a group are probably hunting down any remaining demons after the Legion dissolved.
This. There are a ton of demons still out there and probably fighting for leadership of what remains of the legion. They are still gonna cause trouble.
If I were a Demon Hunter, I would slap the little statues of Sylvanas and the Arbiter off the big map on the table, and growl:
“Mal’Ganis!”
Marius is a hint that there are some sort of neutral ones still hunting demons in some way.
Same purpose as they had during BFA… serve as the Champion of (Faction) name with the addition of being Champion of (Covenant) name. They’re now in the same category as every other player character class. just like Death Knights after Wrath. They no longer have any special status, they’re as highlighted or ignored as the rest of us.
First time? Get comfy cause you’re gonna be neglected for the next 8-10 years. You’re just gonna be there. That’s it, just there for years and years until blizzard decides you’re relevant again.
My Demon Hunter is making that Arthas yell only it’s “Sylvannas” that’s the demon she wants to end. Just because your class says “Demon Hunter” that doesn’t mean it’s the only thing you can swing your blades at.
Ending a Warden that’s turned against her own people works too.
Not to mention Illidari of the opposing faction are fair game as well.
