one of my recent 120s took up inscription and milled out most of my overstock of riverbud and sirenstings. next one will take up jewelcrafting to deal with my stockpile of storm silver
a little further back i took this character into lfr nighthold for the rank 3 bag recipe to lower my hoard of shal silk and arkarna

Mining/herb got me my casual million gold this xpac which i then used to pay for SL. Casual as in a couple hours a week every Sunday. While I don’t necessarily disagree with the main sentiment of your post, i’m not sure this is the way to fix it. I suspect it would only really benefit the people you’re seeking to shut down here.
So with that being said, off the top of my head here’s how I would deal with the main two offenders you mention while keeping the node system the same as it currently is.
Botters: When the inevitable ban wave goes out, remove any current AH listings. As well, revoke gold to any accounts that traded, were mailed, or were the recipient of questionable transactions using innocuous items on the AH.
Multiboxers: Account wide node tapping ICD. Set it to say… 30 seconds. This could get tricky if the multiboxer is using multiple accounts opposed to multiple licenses on one account of course, but it could be adapted to just be a client side thing where if it’s detected that more than one character is attempting to access a node using similar interface input commands within a certain period of time, the ICD is triggered as well.
Lets be real though, multiboxing = money. I don’t really have a problem with them personally, but if anyone thinks Blizz is going to alienate users who are spending 75+ a month just to take advantage of an economy that they themselves already killed, I just don’t think it’s gonna happen.

Come herb and mine on my server (Baelgun), it doesn’t have the problems you mention.
