I would go dwarf for healing and tauren otherwise.

Dwarf shamanism was made up just like draenei shamanism and blood elf paladinism; Tauren (and Trolls, and Orcs) have had shamanism as a core element of their society since the beggining.

Tauren totems are actual totems and not some stylized piece of garbage stuck in the ground.

Both are their respective factions best option for the class imo so whichever faction you want for it the most. I regret making mine a draenei and panda but since I am not really interested in sham I chose races I never use.

How is it made up? It makes perfect sense to me… we are basically a part of Azeroth itself… living stone. We live inside mountains! We love our elements! Fire, the wind, the sky and the ground. We have a close connection to nature as well. Just as strong a bond to gryphon as a Orc to a wolf. They even worship their ancestors and elements. The wildhammers are true shaman!
