Still beats being an elf.
They don’t weigh anywhere near two tons, and “murder machine” is a bizarre descriptor to apply to them.
Aside even from that, why should it be any surprise that the Centaur won out? Evolution almost never favors the big and bulky over the quick and numerous.
Especially one that truly lives up to their name.
This sent me on a quick Google to see what is at least semi-official, and I’m once more left in wonderment at how laughably undershot RPG weight totals are (and not just WoW by any stretch).

We’re told rather directly that the Tauren paid back Centaur aggression and killed more centaur for every tauren death. The issue is, the centaur massively outnumbered the tauren.
In Classic I remember the Centaur quests in the Barrens and it could get pretty brutal if they amassed in enough numbers.
The centaur were driving the tauren into extinction before Thrall and his orcs and trolls came into the neighborhood. The night elves just watched, assuming they even bothered to take notice.

Or they lost contact already with the taurens/never bothered to leave their forest and as far as the night elves are concerned were as much of a myth to them as the high elves would be.
tbf, the Darkspear also had to contend with Kul Tiran forces shortly before that. The Darkspear were a small tribe of jungle trolls at that. Nothing compared to the main ones we encounter in Stranglethorn vale.

They are easily startled, but they will soon be back. And in greater numbers.
That works logically until you realise that the Night Elves were controlling territory in Feralas.
They were doing business in Silithus as well. The entire reason the First War of the Shifting Sands started was that Fandral wanted a garden in Silithus.
That kind of punctures the air out of the idea that the Night Elves were unaware of what was going on between the centaur and the tauren.
They simply did not care.
Truth. The night elf and tauren relationship has been massively overblown, they weren’t and never have been best buds like people think they are.
Except Feralas was only taken over by both factions after Warcraft 3. There is a reason it is considered the frontier by both. Effectively, both sides rediscovered the area.
Or they just went to Silithus via sea(as we saw the night elves planned to do in Bfa) and largely would not have interacted still with the taurens.
While I would agree the Night Elves probably knew more about Tauren then them just being a myth, I would argue they probably had a decent idea of who the Tauren were. However, I don’t think Feralas means they were aware of the specifics of the situation the Tauren were in. Regardless of how much or how little the Night Elves kept a presence in Feralas at the time, the Tauren were not anywhere near any holdings the Night Elves may have had.
Remember, Night Elves were mostly isolationists at the time. The Tauren were never a threat to them and they did not share a boarder. They would not really have had any reason to keep an eye on them. They likely had little to no knowledge of the Tauren vs Centaur conflict. At best they might have known the groups were fighting, but not known the details or state of the conflict.
Also, remember, they were surprised to see the Orcs and Undead. They only found out about them after they invaded Night Elf territory. If they had been keeping an eye on what was happening with the Tauren, they would also have seen the other groups much sooner.
All evidence points to them being mostly, if not completely unaware of what was happening in those lands.

It wasn’t that they didn’t care the Tauren were being wiped out. I don’t think they knew that. It was more that they didn’t care to keep track of what was happening in that area to start with.
