I loved getting mats, I HATED that that was the only way to get rid of azerite gear for the longest time.
Having one on the fly to convert unwanted gear into mats would be neat.
The problem with the BFA scrapper was that it was the only way to reliably get expulsom, which kind of sucked.
No doubt. I skipped crafting aside from fishing in BFA purely because of the expulsom issue.
Remix has proven that I like the scrapping and gear upgrade system much better than having your BiS stuck behind RNG. Get a piece of gear with the stat(s) you want on it, and then upgrade it over time. Scrap unwanted drops for currency.

The only concern I could think of is the hard decision enchanters would have to make on whether to disenchant or scrap gear. If you scrap everything, you won’t have any enchanting mats. If you disenchant everything, you’ll fall behind in whatever the scrapper provides.
I hate flight stones and why did they have to make it so convoluted with different currencies?
