I am currently 100/100 in Shadowlands Leatherworking. If I unlearn this so that I can switch to another Profession, what will I lose?
If I decide to come back to Leatherworking, will I start at 1/100 again?
That’s the way it’s always worked. I haven’t actually done it this expansion but I haven’t heard that any changes were made. And it’s not just Shadowlands LW, you’ll have to start over with all the other expansions too.
As for what you lose, I’m not sure what happens with the Boneshatter & Umbrahide legendary patterns. You get access to those by completing a quest given by the Runecarver. In previous expansions there was an item you could purchase that would restore any patterns acquired through non-repeatable quests, but I’m not seeing such an item for sale in Oribos. OTOH, the Runecarver quest doesn’t give you the patterns, it just unlocks access to them - you still have to buy them from the trainer after completing the quest. So maybe that unlock persists across profession changes, allowing you to purchase the corresponding patterns in your new profession and to re-purchase the LW patterns if/when you switch back.

I have tried on several toons to unlearn a profession, but the button doesn’t work on any of them…am I missing something here?
It’s working for me. Try temporarily disabling your addons, they can sometimes interfere with UI buttons.
