Straight up most fun class in hardcore?
Not worried about whats easiest or fastest, just straight up whats most fun? Ive done hunter and mage a lot but might be them
warrior is the best HC class, bar none. you feel accomplished when you succeed as a warrior

I would say mage or rogue. Because your defense, or ability to survive, is purely based on what cooldowns and skills you use, rather than a passive number.
Also the dueling and pvp on these classes is amazing, for the reason mentioned above. But pve is really boring with these classes since you don’t get to use 90% of your abilities.
I’ve played WoW for a long time and have delved deep into every class besides mage.
I made a mage as a side character in hc literally for the purpose of doing a profession for me… After a few levels ive finally understood why people love mages. Holy shiz. I dropped my main so fast, mages are so fun!!
My vote would be warlock or rogue.
Warlock can get into such a fun/strong rhythm of DoTing, and fearing multiple mobs. If you’re undead and stocked up with health pots, bandages, undead for cannibalize, etc you will straight up have minimal downtime, if any.
Rogue is also pretty good. I really don’t each much with him either. Just occasional bandages. Human mace/sword rogue is really smooth to play, and once you get into 30s with blade flurry it gets even better.
I am going to finally try to take on a mage again just for something different. I think the mage AoE grind can probably be a bit fun to do, but obviously a lot more dangerous in HC.
While I’m not an overall DPS fan (life long tank and healer), mage in HC is wicked fun. Its about control. Pull an add, sheep. Pull more? Frost Nova and run. You kind of learn that so long as you have CDs and mana, you’ll likely survive.
I do find priest to be fun as well, but that’s because I like trying to save people when they mess up and pull too much and drop some clutch heals.
Druid is also fun for me. I like the ability to swap forms, stealth is always nice, and being less gear dependent.
Ret paladins seem like the best fit, IMO.

for me it has been the priest, buffing and healing people in trouble has been enjoyable.

Mage or Warrior. Mage you can pull off some crazy things if you do it right. Warrior you can die at any time and your survival abilities are much harder to use than most of the other classes.

As you can see fro the answers you’ve gotten so far, this is a question of personal taste 
Fool around with a few classes, and choose the one - or two - appealing most.

I have the most fun as Shaman.
I wouldn’t confuse “having more tools to use” as making them “easy”. You have more cooldowns, which means you have to make more decisions. Your defense is based on what you do, rather than what you’re wearing. A bad rogue or mage will suck harder than anything.
Death Knight is fastest to 60.
