If my goal is only to vendor what i gather, what is the most profitable
Leather and cloth, you wont ever have to slow down and can make cloth for bags to hold all that fat loot leather. Alternatively, take one of herbs/mining but I think the vendoring value is probably not worth your time, and would say the more important thing would be take the one you like doing more.
I agree with kynsa on this. Learning tailoring can be a little annoying to level if you’re not playing a cloth class but overall, the bags would probably be the best return on investment. It’s especially good if you are a cloth wearer.
Skinning is always the best gathering profession (for vendoring no ah) as you hardly ever need to go out of your way as long as you skin whatever you kill. By your question I’m assuming you are doing the new sf hc? If not than usually mining is the best for selling on the ah.

done a lot of fishing in SoD waiting for the 2nd phase, I have surprisingly fished up quite a bit of gear and patterns and made fair amount of gold at the vendor, fishing will be important on self found mode.
Mining is actually profitable to vendor along with skinning. Smelting bars and selling them nets decent cash. However, fishing is probably better. I’d get useful professions you can use for survival and just fish for extra gold if you need it for mount.
