but seriously is there a lore explanation to how this spell actually works?

Magic shields
Enchanted shields
Probably something to do with that back in the older version of the game.
There’s a shield in game that Blacksmiths can craft… Jagged Obsidian Shield that has a 5% chance to silence casters when hit by a spell as an example of a anti magic shield.
Some shields are magically enchanted to ward off magic but in the case of the warrior it’s a simple matter of tilting your shield at just the right angle to bounce a fireball or frostbolt.
As for why you can do it without a shield in Shadowlands? I guess you were so angry that the chaos bolt hurtling toward you got scared and went the other way.
