How does one decide gear when it comes to sockets? Would you take an ilvl hit for the socket?
I personally have a hard time making that call, as a lot of people twll me that a socket makes up for any ilvl drop or stat loss.
Would you drop a piece of gear with perfect stats and a higher ilvl for a lower piece with decent stats and a socket?
Using a sim is the best way to answer that question.

If you REALLY dont want to sim, a socket is almost always worth more than 5 ilvls. Above that, stick to simming.
15 ilvl gives less than 40 stats in most cases, and you can choose the stats with a socket.
It's usually fairly obvious even before simming, except in close edge cases. The exception for me is on tank gear, because the value of armor and stamina increases is far less intuitive.
From what I have seen and from experience and sims. A socket is worth ~10 iLvls.
Like others are saying in the topic, it's around 5 to 10 item levels depending on how stats sim for your class.
Sockets are even better with reorrigination array. If your best stat is haste, but your gear has more mastery. You want your array to give haste but you just dont have enough, sockets let you gem that stat to get the array. It acts as a psuedo-reforge.

Your math is good, but your understanding of how stats work is pretty sub par. Go back to class.

It really does matter though if you are doing high end content. If you are doing world quest, lfr, old content of course they dont matter. Heroics and mythics, if you aren't gemmed correctly and ench as ntdd correctly you will not come to my group.

Look at 3 sockets on some 70 level get was for a short time.
You could put 3x20's and the main status was like 35 ! So it was big really big, but then...
